One of my favorite things to make with my freeze dryer is spice and seasoning mixes freeze dried liquids and herbs. I am slowly starting to replace my pantry staples with homemade versions, sometimes healthier, sometimes maybe not but I always know what’s in my food and I want that. I am definitely still learning and getting inspiration from others but enjoying the process. This homemade chicken bouillon is is a perfect replacement for the cubed stuff you get at the store.

I reduced homemade chicken broth, poured them into freeze drying trays, froze overnight and then freeze-dried them. It’s definitely a lengthy process but you can make a big batch and with the added herbs and spices the bouillon turned out great. In the future I may try freeze drying chicken with the broth for more protein and volume. I’ll update this post if/when I experiment with that!
If you don’t have a freeze dryer or want to make a vegan version you can swap out the freeze-dried chicken broth for nutritional yeast. This creates a savory, umami rich flavor. You can also add it into the recipe below for added flavor!
