Farmer's Cheese Ball

This quick and easy soft cheese ball is great for parties, cheese boards, and holiday get togethers!

Ingredients
  

  • 1 gallon whole milk
  • 2/3 cups white vinegar
  • 1 tsp salt
  • 1/4 cup fresh herbs and/or 1 tsp spices (optional)

Instructions
 

  • Pour a gallon of milk into a large pot. Heat slowly over medium heat stirring until it reaches 185°F.
  • Turn down heat to low and slowly stir in the vinegar. You’ll start to see the milk curdling. Let the curds form and clump together for about 10 minutes.
  • Line a strainer with cheesecloth and pour the mixture into it to separate the curds from the whey.
  • Once most of the whey has drained, transfer the curds to a bowl and add in salt for flavor and any other herbs or spices.
  • Mix herbs in with the curds by hand and slowly form a ball. Wrap ball in plastic and place in fridge to let the flavors develop.
